Elderflower champagne recipe

Sparkling Elderflower

(makes 4.5 litres)


24 florets of Greens of Devon Fresh Elderflower Blossom
700g sugar
2 organic lemons + 2 tbsp white wine vinegar
4.5 litres drinking water

1 large pot, bucket or bowl 4.5 litre + capacity
A sturdy wooden spoon and or potato masher
Butter muslin (available on line here)
Bottles to withstand pressure, e.g. Grolsch beer bottles, cleaned and sterilised.


Scrupulously clean a 4.5 litre+ bucket, pot or bowl.

Add the zest and juice of 1 lemon, and the 2nd lemon cut into slices
Add the sugar, vinegar and elderflower florets stripped from the flower heads.
Bruise well with a potato masher
Add 4.5 litres water and stir for several minutes

Cover with a clean cloth - not cling film or foil - and leave for 2 to 4 days.
Strain the mixture twice through damp butter muslin, then pour into the bottles, but not filling completely - leaving a inch gap at the top.

Age in a cool larder for 7-10 days, serve chilled into very cold glasses.
